Avocado Corn Salsa

My mother-in-law makes this salsa every year on Christmas Eve. I enjoy this dip so much, that I can't wait to have it only once a year. I'll often bring this as an appetizer to social events, and it's one of those dishes that everyone asks for the recipe. The women love it, the men love it. It's healthy and delicious! Rating: 10/10



Ingredients:

3 tablespoons cider vinegar
1/3 cup olive oil
1/4 cup lemon juice
5 cloves of minced garlic
1/2 teaspoon salt
1/2 teaspoon pepper
1 bunch of green onions (chopped)
4-5 ripe avocados
1 1/2 Cup frozen corn

Note: Real lemons (instead of juice) and actual garlic (instead of refrigerated minced garlic) will give this better flavor.

Directions:

Mix the first seven ingredients together well (vinegar, oil, lemon juice, garlic, salt, pepper, onions) to make a dressing. Chill if possible. Chop avocados and place them in a serving bowl. Pour dressing over avocados and add frozen corn. Mix together.

Serve with Chips.
