BBQ Chicken Pizza

I love this pizza dough recipe. It's delicious, from scratch, and doesn't require more than ten minutes of rise time. I found the dough recipe on Plain Chicken. I added the ingredients for the pizza shown below. Oh my goodness, this pizza is good. Rating: 10/10


Ingredients/Directions (dough):

2 1/2 cups four
1 tablespoon sugar
1 teaspoon salt
1 tablespoon Rapid Rise or Bread Machine yeast
1 cup hot water
2 tablespoons olive oil
Parchment Paper

1) Preheat oven to 475 degrees.
2) Mix dry ingredients together in a large mixing bowl. Add hot water and olive oil. Mix for five minutes and then let the dough rest 10 minutes. Roll out the dough onto a piece of parchment paper and place on a cookie sheet - make sure the dough rolls out to the same size as the cookie sheet! Note: You can also split the dough to make two medium-sized pizzas.


BBQ Chicken Toppings
:

1 (40 oz.) bottle of BBQ sauce
3 cups monterrey jack cheese
2 cups shredded chicken, cooked - we often use a rotisserie chicken
1 red onion, sliced
Cilantro, chopped (optional)

1) Spread a thin layer of BBQ sauce onto both pizzas.
2) Sprinkle cheese on top.
3) Place shredded chicken in a bowl and mix in enough BBQ sauce to fully coat the chicken. Spread the chicken evenly over the pizza.
4) Add desired amount of red onions and cilantro to the pizza. Bake for 12-15 minutes, until cheese is bubbly.
