Gram's Eggs Benedict

Every Christmas morning, my mother in law makes this. She visited last week and this is another meal we made together.



Ingredients (Hollandaise Sauce):

5 tablespoons lemon juice (from real lemons)
3 tablespoons water
3 whole eggs
1/2 cup butter
1/2 teaspoon salt

Directions (Hollandaise Sauce):

1) Whisk lemon juice, water and eggs together in a until pale yellow. Set aside.

2) Melt butter in a sauce pan. Once melted, turn the heat to low. SLOWLY add in the lemon mixture while whisking vigorously (you don't want the eggs to cook). 

3) Continue to whisk until the mixture thickens. Remove from heat and add salt. 


To make Eggs Benedict: Layer a toasted sour dough english muffin, slice of ham, poached egg and hollandaise sauce. Sprinkle pepper on top.
