Oven Baked Tacos

My mother-in-law made these for dinner one night and I have been wanting to make them ever since! I love how easy and quick they are to prepare. They make enough to feed a family all at once. The recipe is from Six Sisters. Rating: 10/10.



Ingredients.

  • 1 lb lean ground beef
  • 1 (15 oz) can back beans, drained and rinsed
  • 1 medium onion, diced
  • 1 (1 oz) package taco seasoning
  • 2 cloves garlic, minced
  • 1 cup chunky salsa
  • 12 hard shelled tacos
  • 1 1/2 cups shredded cheddar cheese
  • Additional Toppings (tomatoes, lettuce, olives, sour cream, guacamole, pico de gallo, etc.)
Directions.
  1. Preheat oven to 400 degrees.
  2. In a large skillet, heat oil and add onion and garlic. Saute for about 5 minutes until soft. Add beef and taco seasoning, cooking until meat is browned. Add beans and salsa. Mix well and let cook for a couple of minutes so that the flavors can melt and the mixture can thicken.
  3. In a large 9x13 baking pan, line up all the taco shells. Fill each one with a couple of scoops of the beef mixture and pack down into the shell. Repeat until all the shells are filled. Top each taco with shredded cheese.
  4. Bake for 10-12 minutes (or until all the cheese is melted).
  5. Serve with your favorite taco toppings.

Note: Make sure beef filling doesn't have much liquid before adding it into the taco shells. It makes the shell soften and fall apart if there's too much liquid.
