Banana Oat Blender Pancakes

My six is learning to eat bananas plain, but doesn't mind the taste blended into things. There are FIVE bananas in this recipe and I'm pretty sure my six had at least one of them in all the pancakes he ate for breakfast this morning. I love that these are clean and have good, quality ingredients in them. And I can't resist a recipe made in the blender. This is a recipe slightly adapted from Cookie & Kate.



Add these ingredients to a blender:


  • 5 bananas (medium)
  • 4 tablespoons coconut oil, melted
  • 2 tablespoon lemon juice 
  • 2 teaspoon maple syrup
  • 4 eggs
  • 2 cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
Blend. Pour onto a hot, greased griddle. When the bottom is brown, flip. When the underside is brown, take the pancake off the griddle and serve with maple syrup, jam and/or fruit. We love to eat these for lunch or for a snack as a peanut butter sandwich.
