Navajo Tacos

I have had so much fun cooking in the kitchen lately. I found another great recipe from Cooking Classy - Navajo Tacos. You can find also homemade fry bread recipe on her site, but to save on time I made our fry bread from rhodes rolls. The meat filling is delicious and so flavorful. It made enough for my little family (2 adults & 2 toddlers) to have navajo tacos a night and regular tacos as leftovers the following night. Rating: 10/10

Ingredients (Tacos):
  • 1 Tbsp olive oil 
  • 3/4 cup yellow onion, diced 
  • 2 cloves garlic finely minced 
  • 1 lb lean ground beef 
  • 2 tsp chili powder 
  • 1 tsp ground cumin
  • 1/2 tsp paprika 
  • 1 (15 oz) can dark red kidney beans, drained and rinsed 
  • 1 (8 oz) can of tomato sauce instead) 
  • 1 (4 oz) can diced green chilis 
  • Salt and pepper, to taste
  • Toppings: Lettuce, cheese, tomatoes, sour cream, olives, avocado, cilantro or salsa

Directions (Tacos):

1) Heat olive oil in a 12-inch non-stick skillet over medium-high heat. Add onions and saute 2 minutes, add garlic and saute 20 seconds. Scoot mixture to the side then crumble beef into skillet. Season with salt and pepper and cook stirring occasionally and breaking up beef when stirring, until beef has browned and cooked through. Drain fat from beef and return to skillet. 

2) Stir in chili powder, cumin, paprika, kidney beans, tomato sauce (add a few tablespoons of water to thin out mixture if needed) and green chilies then season mixture with salt and pepper to taste. Cover and simmer for 10-15 minutes (I made our fry bread at this point). Using a slotted spoon, spoon mixture over fry bread, then top with lettuce, cheese, tomatoes, sour cream or other toppings.


Ingredients (Fry Bread):
  • 8 Texas rhodes rolls, thawed (I put our frozen rolls in the fridge for a few hours to thaw)
  • Vegetable/Canola Oil

Directions (Fry Bread):

1) Fill a pot or skillet 2-3 inches high with oil. Heat over medium heat. 

2) Use your hands to make the thawed rolls flat and large. Once the oil is hot, carefully add one of the rolls to the oil. When the bottom of the roll is browned, use tongs to flip the roll and cook the other side until it's browned as well. Use tongs to place the fry bread onto a paper towel. Enjoy the tacos, but don't forget to save a piece of fry bread to serve with butter and honey or powdered sugar.
