Ebelskivers

Every year on December 5, we make these Danish Pancakes, also knows as Ebelskivers, to celebrate Sinterklaas (A dutch Christmas Tradition). You can read all about Sinterklaas by clicking the link. These are basically little pancake balls that taste like a sweet, fluffy ball of heaven. Note: You need an Eleskiver Pan to make these (see video below). Ingredients: 2 eggs  2 cups buttermilk 2 cups all purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 Tablespoons sugar 1/4 cup melted butter  Directions:  Separate the eggs and beat whites until soft peaks form. Set aside.  In another bowl, combine egg yolks and buttermilk and mix together. Add flour, baking powder, baking soda, salt and sugar all at once. Add melted butter and mix. Fold in egg whites.   Heat Ebelskiver Pan over medium heat. Spray with cooking oil. Fill the cups 2/3 the way full and use two skewers to flip the pancakes when the bottoms are golden...

Blender French Toast with Coconut Syrup

I have always loved breakfast foods! This recipe is AMAZING. I could drink the coconut syrup from a cup. Who wouldn't want to try the picture below from Flovorite ? Rating: 10/10 Ingredients 4 eggs  1 c. milk 1/4 tsp. salt 2 tsp. vanilla 1/4 c. + 2 T. flour 1 lg. loaf French bread, sliced thick (about 12-13 slices) Coconut Syrup 1/2 c. butter or coconut oil ¾ c. buttermilk 1 c. sugar ½ tsp. baking soda 1 tsp. coconut extract Instructions In blender, combine all ingredients except bread. Blend until mixture is lump-free. Transfer to a shallow bowl. Quickly dip both sides of bread in mixture and place on greased, hot skillet (heated to 325 degrees). Flip over when browned. Serve with hot Coconut Syrup. Coconut Syrup Place butter, buttermilk and sugar in a medium saucepan. Stir over medium heat until butter melts and sugar dissolves. Bring to a boil and boil one minute.
