Grinch Night

One of my favorite things we did last year was Grinch Night. I have always loved The Grinch (especially the cartoon version) since I was little, and I have been excited all year to do Grinch Night again this year. We upgraded our outfits a bit this year and found the CUTEST Grinch Pajamas from Hanna Andersson. My older two boys are wearing them in the photo below. Grinch Night is all about eating green, wearing green, and watching the Grinch.



Merry Grinchmas! For Grinch night, you need to eat green food. If you want a savory meal, you could try these tomatillo enchiladas + cilantro lime rice + broccoli. You could make a green smoothie. But, our favorite thing to eat for Grinch Night are these green pancakes (from Yummy Toddler Food).


INGREDIENTS

  • 2 small very ripe bananas (about 1 cup mashed)
  • 2 large eggs
  • 1 cup whole wheat flour
  •  1 cup unsweetened almond milk (or other favorite milk)
  • 2 cups lightly packed baby spinach
  • 1 tablespoon ground flaxseed
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
Add ingredients in a blender and blend until smooth. Pour on a greased griddle and cook, flip, and cook until done. This recipe makes 12 pancakes. We often double the recipe. These pancakes really good with peanut butter and maple syrup! We even have use them as the "bread" of a peanut butter and honey sandwich.


We served the pancakes with these cute little grinch skewers.
