Chicken Ranch Tacos

One of my dear friends brought these to me after having my second baby. We loved them and have made them multiple times since them! Also, we love easy and healthy crock pot meals. The picture and recipe are from  Plain Chicken . Rating: 10/10. Ingredients . 3-4 boneless, skinless chicken breasts 1 packet taco seasoning 1 packet Ranch seasoning mix 1/2 cup chicken broth Taco shells Toppings (shredded lettuce, cheese, pico de gallo/salsa, sour cream, tomatoes) Directions . Put chicken, taco seasoning, Ranch seasoning, and chicken broth in Crock Pot. Cook on low for 6-8 hours. Shred chicken with two forks and place back in the crockpot to soak up the broth.  Serve in taco shells topped with lettuce, cheese, tomatoes/salsa, and sour cream.

Sugar Cookie Fruit Pizzas (chewy)

These have to be one of the BEST cookies I've ever had. The texture is chewy and soft and the cream cheese frosting puts these over the top. We served them with strawberries, blueberries and pineapple. So good! Picture and recipe from Cooking Classy . Rating: 10/10. Ingredients . 2 3/4 cups flour 1 tsp baking soda 1/2 tsp salt 1/2 tsp cream of tartar 1 1/2 cups granulated sugar 1 cup butter, softened 1 large egg 1 large egg yoke 2 tsp vanilla extract Fresh fruit of various colors Cream Cheese Frosting 5 Tbsp salted butter, softened 8 oz cream cheese, softened 2 cups powdered sugar 1/2 tsp vanilla extract Instructions . White Almond Texas Sheet Cake

I'm a huge lover of chocolate sheet cake and decided to give the white sheet cake a shot! I love the almond flavor and this cake is even better (and more moist!) the second day. This recipe is from All Recipes . Rating 10/10. Ingredients (Cake) . 1 cup butter 1 cup water 2 cups flour 2 cups white sugar 2 eggs 1/2 cup sour cream 1 teaspoon almond extract  1/2 tsp salt 1 tsp baking soda Directions (Cake) . Preheat oven to 375 degrees. In a large saucepan, bring 1 cup butter and water to a boil. Remove from heat, and stir in flour, sugar eggs, sour cream, 1 tsp almond extract, salt, and baking soda until smooth. Pour batter in a greased 10x15 inch baking pan. Bake in the preheated oven to 20-22 minutes, or until cake is golden brown and tests done. Cool for 20 minutes and spread frosting over warm cake. Slow Cooker Cream Cheese Chicken Chili

I went through a phase of trying so many recipes on Plain Chicken and found many that I really enjoyed! This being one of them. It's an easy, dump in the crockpot and the meal is done for you, kind of meal. Rating: Ingredients . 1 can black beans 1 can corn, undrained 1 can Rotel, undrained 1 (1 oz.) package ranch dressing mix 1 tsp cumin 1 tsp onion powder 1 Tbsp chili powder 1 (8 oz) package light cream cheese 2 boneless, skinless chicken breasts Directions . Drain and rinse black beans. Place chicken at bottom of pot, then pour out whole can of corn (undrained), rotel, and black beans. Top with seasonings and ranch mix. Stir together. Place cream cheese on top. Cover with lid and cook on low for 6-8 hours. Stir cream cheese into chili. Use 2 forks to shred chicken. Stir together and serve, Note: Can place all ingredients in a freezer bag and freeze for a quick freezer meal later.

Creamy Tomato Tortellini Soup

I have always loved Tomato Soup, so I was excited to find a new version with tortellini! This recipe is so simple and quick to throw together. Picture and recipe are from  Plain Chicken . Rating: 10/10 Ingredients . 1 package (9 ounces) refrigerated whole wheat cheese tortellini 2 cans (10 3/4 ounces each) tomato soup 2 cups low-sodium chicken broth 2 cups half and half 1 tsp onion powder 1 1/2 tsp garlic powder 1 tsp dried basil 1/4 tsp salt 1/2 shredded Parmesan cheese Directions . Cook tortellini according to package directions. Drain and set aside. In a large pot, combine the soup, broth, half and half and seasonings. Heat over medium heat for approximately 10 minutes, stirring frequently. Add tortellini to soup. Stir in cheese. Sprinkle each serving with additional cheese if desired.

Oven Baked Tacos

My mother-in-law made these for dinner one night and I have been wanting to make them ever since! I love how easy and quick they are to prepare. They make enough to feed a family all at once. The recipe is from Six Sisters. Rating: 10/10. Ingredients . 1 lb lean ground beef 1 (15 oz) can back beans, drained and rinsed 1 medium onion, diced 1 (1 oz) package taco seasoning 2 cloves garlic, minced 1 cup chunky salsa 12 hard shelled tacos 1 1/2 cups shredded cheddar cheese Additional Toppings (tomatoes, lettuce, olives, sour cream, guacamole, pico de gallo, etc.) Directions. Preheat oven to 400 degrees. In a large skillet, heat oil and add onion and garlic. Saute for about 5 minutes until soft. Add beef and taco seasoning, cooking until meat is browned. Add beans and salsa. Mix well and let cook for a couple of minutes so that the flavors can melt and the mixture can thicken. In a large 9x13 baking pan, line up all the taco shells. Letter of the Week: S January Themes: My boys (ages 2, 4) go to preschool twice a week, so I planned our activities for the off days - Monday, Wednesday and Friday. I printed a monthly chart (link to come) as a way to keep organized and stay on track. However, some weeks we just do activities as we go. Here's the second theme at a glance: MONDAY : Letter (Snowflake S): My four loved making these snowflakes! This was definitely a team effort as I taught him how to fold the paper and cut into the snowflake. You can view a paper snowflake tutorial here. My two mostly enjoyed opening the snowflakes I had already cut and ripping them into pieces ;) Numbers (Snowman Buttons): Both my boys (ages 4, 2) loved counting buttons on snowmen! It could be because after completing each one they earned a mini chocolate chip. My two is really great at counting and one-to-one correspondence, but we're still working on number recognition. Baked Cotton Balls

If you need a fun, easy, creative and different way to play, baked cotton balls are an excellent option! I recently heard of the idea from  This Grandma is Fun and my boys and I had a little too  much fun playing with them. We are currently learning about SNOW this week, so we formed our cotton balls into a snowman. My four really got into it and I helped my two with his. He mostly loved squeezing the paint between his fingers. My little ones especially loved what we did after  our snowmen cooked... Here's what you'll need: 2 cups flour 2 cups water Food Coloring Cotton Balls Baking Sheet Tinfoil Recommended: Plastic Tablecloth from the Dollar Tree To make the paint: Whisk the flour and water together in a large bowl until there are no lumps.
